AIKO TANAKA ・Professor Emeritus of Food Studies at Osaka Shoin University, Osaka, Japan ・Author and Food Researcher ・Chairman of the Edible Herb Garden Association ・Co-founder of the Food Studies for SDGs Research Institute (FSRI) Aiko Tanaka is a native of Osaka, Japan. While traveling the world she gathered knowledge of regional home cooking and the skill of "cooking communication," appealing to the human heart through the taste buds. In 1988 she and her husband Yutaka Tanaka opened the Japanese restaurant "Shinwa New York" on Manhattan's 5th Avenue. She has written numerous published articles and is considered an expert in the field of cooking. Aiko has also appeared as guest chef on TV programs such as NHK's Kyo no Ryori. In 2018 she published her first book in English, "Food Studies of Osaka: From Paddy Field to Our Chopsticks" (her 11th cookbook to date). Aiko lectures on Japanese foodways and culture at international conferences and offers cooking lessons from her home studio.
